Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it to prevent sticking.
- Mix Filling: In a large bowl, combine the shredded chicken, softened cream cheese, shredded cheddar and Monterey Jack cheeses, sour cream, chopped green onions, diced green chiles, garlic powder, onion powder, ground cumin, and salt. Mix thoroughly until all ingredients are well incorporated into a creamy filling.
- Warm Tortillas: Microwave the tortillas for 20-30 seconds to make them more pliable, which will help prevent them from cracking when rolled.
- Fill and Roll Taquitos: Spoon about 2 to 3 tablespoons of the filling onto the lower third of each warmed tortilla. Roll the tortilla tightly around the filling and place the rolled taquito seam-side down on the prepared baking sheet.
- Spray with Oil: Lightly spray the tops of the rolled taquitos with olive oil spray to help them brown and crisp during baking.
- Bake: Bake the taquitos in the preheated oven for 15 to 20 minutes, or until the edges turn golden brown and crispy.
