Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
BBQ Sauce Mixture
- 1 cup BBQ sauce (your favorite variety)
- ½ cup pineapple juice (from the can)
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Toppings and Garnish
- 1 cup canned pineapple chunks (drained)
- Chopped fresh parsley or green onions for garnish (optional)
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Mix Sauce: In a small bowl, whisk together BBQ sauce, pineapple juice, soy sauce, garlic powder, smoked paprika, salt, and black pepper until well combined.
- Assemble Chicken: Place the chicken breasts evenly spaced in the prepared baking dish. Pour the BBQ sauce mixture over the chicken, ensuring each piece is well coated. Evenly distribute the drained pineapple chunks on top.
- Bake Covered: Cover the dish with foil and bake in the preheated oven for 25 minutes. This step allows the chicken to cook gently and absorb flavors.
- Bake Uncovered: Remove the foil and continue baking uncovered for an additional 10 to 15 minutes, or until the chicken reaches an internal temperature of 165°F and the sauce is bubbling and slightly caramelized.
- Rest and Serve: Let the chicken rest for 5 minutes after baking to redistribute juices. Spoon additional sauce over the chicken and garnish with chopped fresh parsley or green onions if desired before serving.
Notes
- Serve this dish with steamed rice, roasted vegetables, or a fresh green salad for a complete meal.
- For enhanced flavor, marinate the chicken breasts in the BBQ sauce mixture for 1–2 hours before baking.
- Use gluten-free BBQ sauce and soy sauce to make the recipe gluten-free.
