Description

These Balsamic Garlic Grilled Mushroom Skewers are a flavorful and healthy vegetarian side dish perfect for any grill session. Marinated in a tangy balsamic and garlic mixture, the mushrooms become tender and lightly charred, making them a delicious addition to salads, grain bowls, or sandwiches.

Ingredients

Scale

For the Marinade

  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Main Ingredient

  • 1 1/2 pounds whole button or cremini mushrooms, cleaned and stems trimmed
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together balsamic vinegar, olive oil, minced garlic, soy sauce or tamari, dried oregano, salt, and black pepper until well combined.
  2. Marinate the Mushrooms: Add the cleaned and trimmed mushrooms to the marinade. Toss well to evenly coat all mushrooms. Let them marinate for 15 to 20 minutes, stirring once or twice to ensure even absorption of flavors.
  3. Preheat the Grill: Preheat your outdoor grill or a grill pan over medium heat to get it hot enough for grilling the mushrooms.
  4. Thread Mushrooms onto Skewers: Thread the marinated mushrooms onto the skewers, packing them snugly but not too tightly to allow even cooking and easy turning.
  5. Grill the Skewers: Place the skewers on the preheated grill. Grill for 8 to 10 minutes, rotating every few minutes to ensure all sides are evenly cooked and mushrooms develop a tender texture with light char marks.
  6. Serve: Remove the skewers from the grill and serve warm. They make a perfect side dish or a tasty addition to salads, grain bowls, or sandwiches.

Notes

  • If using wooden skewers, soak them in water for at least 20 minutes before grilling to prevent burning.
  • These mushroom skewers also work well as a flavorful topping for salads, grain bowls, or sandwiches.
