- 4 cups chopped cooked chicken
- 1â…“ cup salsa
- 3 Tbsp taco seasoning
- 1 (15-oz) can black beans, drained and rinsed
- 6 cups shredded Mexican cheese blend

- 20 soft taco tortillas
- Fresh cilantro, for garnish
Instructions
- Preheat and prepare baking sheet: Preheat your oven to 350ºF (175ºC). Line a large baking sheet with parchment paper and place a wide-mouth mason jar or glass in the center to help form the ring shape. Set aside.
- Mix the filling: In a large bowl, combine the chopped cooked chicken, taco seasoning, salsa, and rinsed black beans. Stir well to evenly distribute the seasoning and salsa throughout the chicken and beans.
- Prepare tortillas and fill: Cut each tortilla in half. Place a few tablespoons of shredded cheese and a spoonful of the chicken mixture onto each tortilla half. Roll each tortilla half tightly into a cone shape.
- Assemble the quesadilla ring: Arrange about 13 tortilla cones around the mason jar on the baking sheet with the pointed ends facing the jar in the center. Sprinkle a generous amount of shredded cheese over this layer. Repeat layering with the remaining cones and cheese to create 2 more layers, stacking cones around the ring. Carefully remove the jar once the ring is complete.
- Bake: Place the baking sheet in the oven and bake for about 20 minutes, or until the cheese has melted and the tortillas are golden and crispy.
- Serve and garnish: Transfer the quesadilla ring to a serving platter and garnish with fresh cilantro. Serve warm and enjoy this crowd-pleasing appetizer or snack.
