- 2 tablespoons melted butter or oil
- 2 cups blueberries
Topping
- 1/2 cup rolled oats
- 2 tablespoons flour
- 2 tablespoons brown sugar
- 2 tablespoons butter
Instructions
- Prepare Baking Dish: Grease an 8×8 inch baking dish with butter or oil and preheat your oven to 375°F (190°C) to ensure it’s ready for baking.
- Mix Dry Ingredients: In a medium bowl, combine 2 cups rolled oats, 1/2 teaspoon cinnamon, 1/4 teaspoon salt, and 1 teaspoon baking powder to create the oat base mixture.
- Mix Wet Ingredients: In another bowl, whisk together 1 3/4 cups milk, 1/4 cup maple syrup, 1 large egg, 1 teaspoon vanilla extract, and 2 tablespoons melted butter until fully blended.
- Combine Wet and Dry: Pour the wet mixture into the dry ingredients and stir until just combined. Gently fold in 2 cups fresh blueberries to evenly distribute them throughout the batter.
- Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly.
- Prepare Topping: In a small bowl, mix 1/2 cup rolled oats, 2 tablespoons flour, 2 tablespoons brown sugar, and 2 tablespoons butter. Use your fingers or a fork to blend until crumbly.
- Add Topping and Bake: Sprinkle the oat topping evenly over the oatmeal base. Bake in the preheated oven for 40–45 minutes until the top is golden brown and crisp.
- Cool and Serve: Allow the baked oatmeal to cool slightly before serving to let it set and enhance flavors.
