Buffalo Chicken Topping

  • ¼ cup (1/2 stick) unsalted butter (melted)
  • ¼ cup Frank’s Red Hot sauce (or other hot sauce; to taste)
  • ½ teaspoon garlic powder
  • 2 cups diced cooked chicken breast
  • 8 ounces shredded mozzarella cheese
  • â…“ cup crumbled blue cheese
  • ½ cup small diced red onion
  • 2 scallions (thinly sliced; white and green parts)

Creamy Buffalo Sauce

  • 2 tablespoons Frank’s Red Hot Sauce (or other hot sauce; to taste)
  • ¼ cup sour cream
  • 1 tablespoon milk


Instructions

  1. Prepare the oven and ingredients: Preheat your oven to 425°F (220°C). Allow the pizza dough to sit out at room temperature while you prepare the buffalo chicken topping and other ingredients.
  2. Make the buffalo sauce and toss with the chicken: In a small bowl, combine the melted butter, ¼ cup of Frank’s Red Hot sauce, and garlic powder. Place the cooked diced chicken breast in a medium bowl and pour over half of this hot sauce and butter mixture. Toss the chicken thoroughly to coat it evenly with the sauce.
  3. Assemble the pizza: Unroll the pizza dough onto a rimmed baking sheet lined with parchment paper. Brush the remaining hot sauce and butter mixture evenly over the pizza dough, leaving a ½ inch border around the edges. Spread the buffalo chicken evenly over the sauce, then sprinkle with shredded mozzarella and crumbled blue cheese. Finish by distributing the diced red onion and thinly sliced scallions on top.
