Ingredients
Scale
Pasta
- 12 oz. uncooked pasta
Sauce
- ½ cup extra-virgin olive oil
- 4 garlic cloves (smashed)
- 1.5 lbs cherry tomatoes
- ½ tsp. crushed red pepper flakes
- 1½ tsp. kosher salt
Finishing & Garnish
- 1 cup basil leaves
- 1 oz. fresh grated Parmesan (about â…“ cup, plus more for serving)
- Freshly ground black pepper (to taste)
Instructions
- Cook Pasta: Cook the pasta according to package instructions until al dente. Drain well and drizzle lightly with olive oil to prevent sticking. Set aside while you prepare the sauce.
- Sauté Garlic: Heat a medium saucepan over low heat and add the olive oil along with the smashed garlic cloves. Cook gently until the garlic becomes fragrant and soft, but avoid browning to keep the flavor mild and sweet.
- Add Tomatoes and Spices: Increase the heat to medium, then add the cherry tomatoes, kosher salt, and crushed red pepper flakes. Stir everything to combine and start the cooking process for the sauce.
- Burst and Thicken Tomatoes: Continue cooking the tomatoes, stirring frequently. As the tomatoes soften and begin to burst, use the back of a wooden spoon or a potato masher to crush them, releasing their juices and building a chunky, flavorful sauce. Cook for about 10 minutes until the sauce thickens slightly.
- Finish and Serve: Pour the tomato sauce over the cooked pasta and add the grated Parmesan. Stir well to coat the pasta; the cheese will melt into the warm sauce creating a smooth texture. Stir in the fresh basil leaves, then divide the pasta among individual bowls. Garnish with extra Parmesan and freshly ground black pepper if desired. Serve immediately.
