Ingredients
Scale
Rice and Liquid
- 1 cup long-grain white rice
- 1 3/4 cups chicken broth (or vegetable broth)
Vegetables and Aromatics
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 cup corn kernels (fresh, frozen, or canned and drained)
Fats and Seasoning
- 2 tablespoons unsalted butter
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Garnish (Optional)
- 2 tablespoons chopped fresh parsley
Instructions
- Rinse the Rice: Rinse the rice under cold water until the water runs mostly clear to remove excess starch, then drain well to prepare for cooking.
- Sauté Aromatics: In a medium saucepan over medium heat, melt the butter. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for about 30 seconds until it becomes fragrant.
- Toast the Rice: Add the drained rice to the saucepan and stir for 1 to 2 minutes, allowing the grains to lightly toast in the butter and aromatics, enhancing the flavor.
- Add Broth and Corn: Pour in the chicken broth along with the corn kernels, salt, and black pepper. Stir to combine, then bring the mixture to a gentle boil over medium heat.
- Simmer the Rice: Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 to 18 minutes, or until the rice is tender and the liquid has been absorbed completely.
- Let it Rest and Fluff: Remove the saucepan from heat while keeping it covered. Let the rice sit for 5 minutes to steam. After resting, fluff the rice with a fork and stir in fresh parsley if desired. Serve warm.
Notes
- For an extra burst of flavor, add a squeeze of fresh lemon juice just before serving.
- You may substitute brown rice for a whole grain option, but increase the cooking time and liquid amount according to the package instructions.
- This dish pairs beautifully with grilled chicken, fish, or roasted vegetables for a complete meal.
