Ingredients
Scale
Chicken
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- Juice of 1 lime
Sweet Potatoes
- 2 large sweet potatoes, peeled and cubed
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- Salt and pepper, to taste
Additional Ingredients
- 1 ripe avocado, diced
- 1 cup cooked quinoa or rice (optional, for extra carbs)
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions
- Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). In a bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, paprika, garlic powder, salt, and pepper. Spread them evenly on a baking sheet and roast for about 25-30 minutes, turning halfway through, until tender and lightly browned.
- Season the Chicken: While the sweet potatoes roast, brush the chicken breasts with olive oil and season evenly with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Squeeze the juice of one lime over the chicken for added zest.
- Cook the Chicken: Heat a skillet over medium-high heat and add a small amount of olive oil if needed. Cook the chicken breasts for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with a nice sear on the outside.
- Assemble the Bowls: Divide the cooked quinoa or rice (if using) among four bowls. Add the roasted sweet potatoes and Cajun chicken breasts. Top each bowl with diced avocado and fresh chopped cilantro.
- Serve: Serve the bowls with lime wedges on the side for extra freshness. Enjoy immediately while warm.
Notes
- You can substitute chicken breasts with thighs for a juicier option.
- Quinoa or rice is optional depending on your desired carb intake.
- Adjust Cajun seasoning amount to taste if you prefer more or less spice.
- For extra veggies, add sautéed bell peppers or greens to the bowl.
