Instructions
- Preheat the Oven: Set your oven to 220°C (fan 200°C) or gas mark 7 to prepare for roasting the potatoes and initial baking of the puff pastry.
- Roast the Potatoes: Place the Parmentier Potatoes on a baking tray and cook them in the oven for 20 minutes, turning halfway through to ensure even roasting and a crisp outside.
- Prepare Puff Pastry: While the potatoes roast, slice the sheet of puff pastry into 12 even squares. Then, carefully cut a 1cm border around each square, leaving the corners attached to create a raised edge that will hold the toppings.
- Apply Egg Wash: Lightly brush each puff pastry square with beaten egg. This will help achieve a beautiful golden color and shine once baked.
- Assemble Bites: Place a slice of Camembert cheese in the center of each puff pastry square. Add a portion of the roasted Parmentier Potatoes on top, then sprinkle with dried mixed herbs and white sesame seeds for added flavor and texture.
- Bake Pastry Bites: Lower the oven temperature to 180°C (fan 170°C) or gas mark 4. Bake the assembled puff pastry bites for 15-20 minutes or until the pastry turns golden brown and crisp, and the cheese is melted.
- Serve: Once baked, drizzle each puff pastry bite with honey and garnish with fresh thyme. Serve warm as an elegant appetizer or snack.
