Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook the spaghetti or fettuccine according to package instructions until al dente. Before draining, reserve 1/4 cup of the pasta water for later use, then drain the pasta well.
  2. Caramelize the onions: While the pasta cooks, heat olive oil and butter in a large skillet over medium-low heat. Add the thinly sliced onions, sugar, and a pinch of salt. Cook slowly for 25 to 30 minutes, stirring occasionally, until the onions become deeply golden brown and sweetly caramelized. If the pan gets too dry at any point, add a splash of water to prevent burning.
  3. Add balsamic vinegar: Once the onions are caramelized, stir in the balsamic vinegar if using, to add a tangy depth of flavor. Cook for an additional minute to allow the vinegar to incorporate.
  4. Toss pasta with onions and cheese: Add the cooked pasta directly to the skillet with the caramelized onions. Pour in the reserved pasta water and sprinkle the Parmesan cheese over the top. Toss everything together gently, allowing the cheese to melt and create a light, silky sauce that coats the pasta evenly.
  5. Season and serve: Taste and season with additional salt and freshly cracked black pepper as needed. Serve the pasta warm, garnished with extra Parmesan cheese and chopped parsley for a fresh finish.
