Ingredients
Scale
Lasagna Rolls
- 9 lasagna noodles
- 2 cups cooked chicken, shredded
- 1 1/2 cups ricotta cheese
- 1 cup shredded mozzarella cheese (divided)
- 1/2 cup grated Parmesan cheese (divided)
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Sauce and Topping
- 2 cups Alfredo sauce
- Fresh parsley, for garnish
Instructions
- Preheat and Prepare Noodles: Preheat your oven to 350°F (175°C). Cook the lasagna noodles in boiling salted water until al dente. Drain the noodles thoroughly and set them aside to cool enough to handle.
- Make the Chicken Mixture: In a large bowl, combine the shredded cooked chicken, ricotta cheese, 1/2 cup shredded mozzarella, 1/4 cup grated Parmesan, garlic powder, Italian seasoning, salt, and pepper. Mix everything well to ensure the flavors are evenly distributed.
- Assemble the Rolls: Lay out each cooked lasagna noodle flat and evenly spread a portion of the chicken mixture along the length. Carefully roll up the noodles and place each roll seam side down in a baking dish, arranging them snugly next to each other.
- Add Sauce and Cheese: Pour the Alfredo sauce generously over the lasagna rolls, making sure they are well covered. Sprinkle the remaining 1/2 cup mozzarella and 1/4 cup Parmesan evenly over the top for a golden, bubbly finish.
- Bake Covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 25 minutes. This allows the rolls to heat through and the flavors to meld.
- Finish Baking Uncovered: Remove the foil and bake for an additional 10 minutes to brown the cheese topping beautifully.
- Garnish and Serve: Once out of the oven, garnish the lasagna rolls with freshly chopped parsley for a pop of color and fresh flavor. Serve warm and enjoy!
Notes
- For added moisture, you can spread a thin layer of Alfredo sauce on the bottom of the baking dish before placing the rolls.
- If preferred, substitute rotisserie chicken for a quicker prep.
- To make ahead, assemble the rolls and refrigerate covered for up to 24 hours before baking.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
