Ingredients

Scale

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • ½ cup sour cream
  • 2 cloves garlic
  • 1 cucumber, peeled, cut in quarters and seeded
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons fresh dill
  • Kosher salt, to taste

Pizza Toppings

  • 4 pieces Greek flatbread or pita breads
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cooked chicken breast
  • ½ cup sliced kalamata olives
  • â…“ cup sliced sun-dried tomatoes
  • 1 cup quartered artichoke hearts, packed in water, drained
  • â…“ cup feta cheese
  • Oregano, to sprinkle
  • Kosher salt, to taste
  • Fresh dill for garnish
  • Red chili pepper flakes for garnish

Instructions

  1. Prepare Tzatziki Sauce: Add the garlic cloves, peeled and seeded cucumber, and fresh dill into the bowl of a food processor fitted with a metal blade. Chop the ingredients finely. Then, add the plain Greek yogurt, sour cream, lemon juice, and olive oil. Pulse several times until the mixture is blended but still slightly chunky. Add kosher salt to taste. Transfer the tzatziki sauce to a container and refrigerate it for at least one hour to allow flavors to meld.
  2. Preheat Oven: Set your oven to 450 degrees Fahrenheit (232 degrees Celsius) and let it fully preheat.
  3. Prepare the Flatbread Base: Place each Greek flatbread or pita bread domed side down on a baking sheet lined with parchment paper to prevent sticking and for easy cleanup.
  4. Assemble the Pizza: Spread 1-2 tablespoons of the chilled tzatziki sauce over each flatbread, covering the surface evenly. Sprinkle about ⅓ to ½ cup shredded mozzarella cheese on top of the sauce for a melty base layer.
  5. Add Toppings: Evenly distribute the shredded chicken breast across the cheese layer, followed by sliced kalamata olives, sun-dried tomatoes, and quartered artichoke hearts. Finally, sprinkle the â…“ cup of crumbled feta cheese over all. Lightly season with oregano and a pinch of kosher salt if needed.
  6. Bake the Pizza: Place the baking sheet in the preheated oven and bake for 10 to 12 minutes, or until the mozzarella cheese is fully melted and the feta cheese starts to turn a lovely golden color.
  7. Garnish and Serve: Remove the pizzas from the oven and garnish with fresh dill sprigs and red chili pepper flakes for a bit of heat and brightness. Add extra crumbled feta cheese if desired. Cut each pizza into quarters and serve immediately while hot and melty.

Notes

  • For best results, use good quality Greek flatbreads or pita breads that can hold toppings without becoming soggy.
  • The tzatziki sauce can be made a day ahead and refrigerated to deepen the flavors.
  • Adjust the amount of red chili flakes to control the spiciness according to your preference.
  • Leftover pizza can be stored in the refrigerator for up to 2 days and reheated in the oven for crispiness.
