Instructions

  1. Brown the Beef: In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess grease if necessary to keep the dish from being too greasy.
  2. Sauté Onion and Garlic: Add the diced onion to the skillet and cook for 3–4 minutes until softened. Stir in minced garlic and cook for an additional 1 minute until fragrant.
  3. Add Vegetables and Spices: Stir in diced tomatoes (with juice), kidney beans, tomato sauce, frozen corn, chili powder, cumin, paprika, salt, and black pepper. Mix well to combine all ingredients evenly.
  4. Cook Rice: Add the uncooked white rice and beef broth to the skillet. Bring the mixture to a boil, then reduce heat to low. Cover the skillet and simmer for 18–20 minutes, or until the rice is tender and the liquid has been absorbed.
