Description

Delightful bite-sized chocolate chip cookie treats that are easy to make and perfect for satisfying your sweet tooth. These mini cookie bites are soft, chewy, and packed with melty mini chocolate chips, making them an ideal dessert or snack for any occasion.

Ingredients

Scale

Cookie Bites

  • 1/2 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and prepare a mini muffin tin by lightly greasing it or lining with mini paper liners for easy removal.
  2. Cream Butter and Sugars: In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy. This typically takes a few minutes using an electric mixer on medium speed.
  3. Add Egg and Vanilla: Beat in the egg and vanilla extract until the ingredients are fully combined, creating a smooth batter.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt to evenly distribute the leavening and seasoning.
  5. Combine Wet and Dry: Gradually add the dry ingredient mixture into the wet ingredients, stirring just until combined to avoid overmixing which could make the cookies tough.
  6. Fold in Chocolate Chips: Gently fold the mini chocolate chips into the dough ensuring they are evenly dispersed throughout.
  7. Portion Dough: Using about 1 tablespoon of dough, scoop into each mini muffin cup, filling approximately 3/4 full to allow for spreading during baking.
  8. Bake: Place the muffin tin in the preheated oven and bake for 10–12 minutes, or until the edges are golden and the centers look just set but still soft.
  9. Cool: Remove from oven and allow to cool in the pan for 5 minutes before transferring the cookie bites onto a wire rack to cool completely.

Notes

  • Add chopped nuts or a sprinkle of sea salt on top for extra texture and flavor.
  • Store in an airtight container at room temperature for up to 5 days to maintain freshness.
  • Do not overbake to keep cookie bites soft and chewy.
