- Prepare the Base: Preheat your oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper. In a bowl, combine graham cracker crumbs, sugar, and melted butter, mixing until well incorporated. Press this mixture firmly and evenly into the bottom of the prepared pan. Bake for 10 minutes, then allow to cool completely before adding the cream layer.
- Make the Cream Layer: In a large mixing bowl, beat the softened cream cheese with the powdered sugar and vanilla extract until smooth and creamy. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, ensuring it is well combined and fluffy.
- Assemble the Layers: Evenly spread the cream cheese and whipped cream mixture over the cooled cookie crust, smoothing the top with a spatula. Place the pan in the refrigerator for at least 2 hours so the cream layer sets firm.
- Optional Chocolate Topping: Melt the chocolate chips along with the vegetable oil in the microwave, heating in 30-second intervals and stirring between each until the mixture is smooth. Drizzle or spread the melted chocolate over the chilled cream layer, then return the pan to the fridge for an additional 15-20 minutes to set.
- Cut and Serve: Once fully set, lift the dessert out of the pan using the parchment paper. Cut into squares and serve chilled for a refreshing, creamy treat.
