For the Sauce
- ¼ cup butter
- 1 large onion, diced

- 3 pounds white potatoes, sliced about ⅛” thick

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the scalloped potatoes.
- Prepare Sauce: In a medium saucepan over medium-low heat, melt the butter. Add the diced onion and minced garlic, sautéing until softened, about 3 minutes. Stir in the flour and cook for 1-2 minutes to form a roux that will thicken your sauce.
- Thicken Sauce: Gradually whisk in the milk and chicken broth over low heat, stirring constantly until the mixture is smooth and thickened. Bring it to a gentle boil and cook for about 1 minute. Season the sauce with ½ teaspoon salt and ¼ teaspoon pepper to taste.
- Assemble Layers: Grease a 9”x13” baking dish. Lay down one-third of the sliced potatoes in the dish, season with salt and pepper, and pour one-third of the sauce over the potatoes. Repeat this layering two more times, finishing with a layer of sauce on top.
- Bake: Cover the dish with foil and bake in the preheated oven for 45 minutes. Remove the foil and continue baking for another 35-45 minutes until the potatoes are tender, and the top is golden brown. For an extra crispy top, optionally broil the dish for 3-4 minutes at the end.
- Rest: After baking, allow the scalloped potatoes to rest for 15 minutes. This helps the sauce thicken slightly and makes it easier to serve. Enjoy warm as a delicious side dish.
