Ingredients
Scale
Shrimp and Seasoning
- 1 pound medium shrimp (peeled and deveined)
- 1 teaspoon smoked paprika
- 1/2 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
Vegetables and Aromatics
- 2 cups fresh or frozen corn kernels
- 3 cloves garlic (minced)
- 1 small onion (finely chopped)
Liquids and Dairy
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/2 cup chicken or vegetable broth
- 1/2 cup grated Parmesan cheese
- 1 tablespoon lemon juice
Garnish and Serving
- 2 tablespoons fresh parsley (chopped)
- Cooked rice or pasta (for serving)
Instructions
- Sauté Onion and Garlic: Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for about 3 minutes until it becomes translucent. Then stir in the minced garlic and cook for an additional minute until fragrant.
- Cook Shrimp: Add the peeled and deveined shrimp to the skillet. Season them with salt, black pepper, smoked paprika, and crushed red pepper flakes if using. Cook the shrimp for 2-3 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- Warm Corn and Prepare Sauce: In the same skillet, add the fresh or frozen corn kernels and cook for 2 minutes to warm through. Pour in the chicken or vegetable broth while scraping up any browned bits from the bottom of the pan. Then stir in the heavy cream and bring the mixture to a gentle simmer. Let it cook for 3-4 minutes until the sauce slightly thickens.
- Finish Sauce and Combine: Stir in the grated Parmesan cheese and lemon juice to enrich and brighten the sauce. Return the cooked shrimp to the skillet and toss everything together so the shrimp is well coated with the creamy sauce.
- Garnish and Serve: Remove the skillet from heat, sprinkle with freshly chopped parsley, and serve immediately over cooked rice or pasta for a hearty, comforting meal.
Notes
- For a lighter sauce, substitute half-and-half for heavy cream, or use coconut milk for a dairy-free alternative.
- Add diced bell peppers or cherry tomatoes to the skillet for extra freshness and a pop of color.
- Increase the spice by adding more crushed red pepper flakes or a pinch of cayenne pepper.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and should be reheated gently on the stovetop to maintain texture.
