Roasted Garlic
- 1 bulb garlic (roasted)
- 2 tbsp olive oil

- 8 oz crumbled feta cheese
- 4 oz whipped cream cheese
- 1½ tsp Greek seasoning
- ½ lemon, juiced
- Salt and pepper (to taste)
- Olive oil (for drizzling)
- Fresh parsley (for garnish)
- Red pepper flakes (for garnish)
Instructions
- Roast the Garlic: Preheat your oven to 400ºF. Slice off the top of the garlic bulb using a sharp knife, exposing the cloves. Place the bulb on a sheet of aluminum foil, drizzle with olive oil, and sprinkle kosher salt and black pepper over it. Wrap the foil tightly around the garlic and bake for 30 minutes until the cloves are golden and tender.
- Prepare the Feta Mixture: In a food processor, combine the crumbled feta cheese, whipped cream cheese, roasted garlic cloves (squeezed from the bulb), Greek seasoning, lemon juice, and olive oil. Season with kosher salt and black pepper to your taste. Process the mixture until it becomes smooth and creamy.
- Serve: Transfer the whipped feta to a serving bowl. Drizzle with extra virgin olive oil, then garnish with fresh parsley and red pepper flakes for a touch of color and flavor. Serve immediately or chill before serving for a thicker consistency.
