  • 1/4 cup olive oil
  • 1 teaspoon red chili flakes
  • 1 clove garlic, minced
  • 1 teaspoon soy sauce (optional)
  • Salt and pepper, to taste

For Garnish

  • Fresh herbs such as cilantro or parsley, chopped


Instructions

  1. Make the chili oil: Heat 1/4 cup olive oil in a small pan over low to medium heat. Add 1 teaspoon red chili flakes and 1 clove minced garlic. Let the oil infuse for 2-3 minutes, stirring occasionally to prevent burning the garlic. Optionally add 1 teaspoon soy sauce for extra depth. Remove from heat and set aside to cool.
  2. Heat the skillet and oil: Warm a non-stick skillet over medium heat and add enough olive or vegetable oil to cover the bottom, about 1-2 tablespoons.
  3. Fry the eggs: Crack 2 eggs into the skillet and cook for 3-4 minutes until the edges become crispy and golden. Adjust cooking time to your preferred yolk consistency—less time for runny yolks, more time for firmer.
