Description

This Crispy Pita with Chicken Feta recipe is a delicious Mediterranean-inspired dish featuring crunchy baked pita bread topped with savory chicken, creamy feta cheese, fresh cherry tomatoes, and thinly sliced red onion. Perfect as a quick lunch, appetizer, or light main course, it’s easy to prepare and customizable with optional garnishes and sides like tzatziki or hummus.

Ingredients

Scale

For the Crispy Pita and Toppings

  • 2 pita breads (halved or whole)
  • 1 cup cooked shredded or chopped chicken breast
  • 1/2 cup crumbled feta cheese
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

Optional Garnish and Serving

  • Fresh parsley or basil for garnish (optional)
  • Tzatziki or hummus for serving (optional)

Instructions

  1. Preheat the Oven and Prepare Pita: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Brush both sides of each pita bread lightly with olive oil. Place the pita breads on the baking sheet to prepare for baking.
  2. Bake the Pita Bread: Bake the pita breads for 6 to 8 minutes until they turn crispy and develop a light golden color. This initial baking creates the perfect crunchy base for the toppings.
  3. Season the Chicken: In a bowl, combine the cooked shredded or chopped chicken breast with dried oregano, salt, and black pepper. Toss well to evenly distribute the seasoning.
  4. Add Toppings and Reheat: Remove the crispy pita from the oven and evenly top each piece with the seasoned chicken, crumbled feta cheese, halved cherry tomatoes, and thinly sliced red onion. Return the pitas to the oven for an additional 5 minutes to warm the toppings and allow the feta cheese to soften slightly.
  5. Serve and Garnish: Take the pitas out of the oven, garnish with fresh parsley or basil if desired, and serve warm. Offer tzatziki or hummus on the side for dipping to enhance the Mediterranean flavors.

Notes

  • Use rotisserie chicken as a convenient shortcut for quick preparation.
  • Add olives, cucumber slices, or arugula for extra flavor and freshness.
  • This recipe also works great as pita pizzas — try adding your favorite pizza toppings for variety.
