  • 1 1/2 pounds goat meat (bone-in or boneless, cut into chunks)

  • 1 teaspoon ground allspice

  • Salt and black pepper to taste

Aromatics and Vegetables

  • 2 tablespoons vegetable oil
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon grated ginger
  • 2 scallions (sliced)
  • 1 scotch bonnet pepper (whole or halved for less heat)
  • 1 tomato (chopped)

Liquids and Finish

  • 1 1/2 cups beef or chicken broth
  • 8 oz egg noodles or lo mein noodles (cooked and drained)
  • 1 tablespoon soy sauce
  • 1/2 teaspoon brown sugar
  • Juice of 1/2 lime
  • Fresh cilantro for garnish (optional)


Instructions

  1. Marinate the Meat: In a bowl, season the goat meat with curry powder, allspice, turmeric, paprika, salt, and black pepper. Let it marinate for at least 30 minutes, or overnight for best flavor.
  2. Sear the Goat: Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the goat meat and sear on all sides until browned. Remove the meat and set it aside.
  3. Sauté Aromatics: In the same pot, add onion, garlic, ginger, scallions, and the scotch bonnet pepper. Sauté until fragrant, about 3 to 4 minutes.
  4. Add Tomatoes: Stir in the chopped tomato and cook for 2 minutes to release the flavors.
  5. Simmer the Meat: Return the goat meat to the pot, pour in the broth, and bring to a boil. Reduce heat to low, cover, and let it simmer gently for 1.5 to 2 hours, or until the meat is tender and falling off the bone.
  6. Prepare Noodles Mixture: Once the meat is cooked, remove the bones if using bone-in pieces. Add the cooked egg noodles, soy sauce, and brown sugar to the pot. Toss everything to coat the noodles and simmer for an additional 5 minutes.
  7. Season and Garnish: Adjust seasoning by adding lime juice, salt, and pepper as needed. Garnish with fresh cilantro if desired and serve hot for a comforting and flavorful meal.

  • You can substitute goat meat with lamb or beef if preferred.
