Description

These Delicious Raspberry Cream Cheese Bites are a quick and easy dessert featuring flaky puff pastry filled with a sweet vanilla cream cheese mixture and fresh raspberries. Perfectly golden and lightly dusted with powdered sugar, they make a delightful treat for any occasion.

Ingredients

Scale

Pastry and Filling

  • 1 sheet puff pastry (thawed)
  • 4 oz cream cheese (softened)
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh raspberries

For Egg Wash and Garnish

  • 1 egg (beaten, for egg wash)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking.
  2. Prepare the cream cheese filling: In a small bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until the mixture is smooth and creamy.
  3. Cut the puff pastry: Unfold the thawed puff pastry sheet on a lightly floured surface. Cut the sheet into 9 equal squares to create individual pastry bases.
  4. Assemble the bites: Place a small spoonful of the cream cheese mixture in the center of each pastry square. Top each with 1 to 2 fresh raspberries.
  5. Fold and brush: Either fold the corners of each pastry square slightly inward for a better seal or leave the tops open for a rustic appearance. Brush the exposed edges of the pastry with the beaten egg to help achieve a golden finish.
  6. Bake the bites: Arrange the bites on the prepared baking sheet and bake for 15 to 18 minutes, or until they are golden brown and puffed up nicely.
  7. Cool and garnish: Allow the bites to cool slightly before dusting them with powdered sugar if desired. Serve warm or at room temperature for the best taste.

Notes

  • You can use frozen raspberries if fresh ones are not available—just thaw and pat dry before assembling.
  • Add a pinch of lemon zest to the cream cheese mixture to bring extra brightness to the flavor.
  • These bites are best eaten on the same day but can be stored in an airtight container at room temperature for up to 2 days.
