Scale
Chicken Mixture
- 4 cups cooked chicken (shredded)
- 1 (10.5 oz) can cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 (10 oz) can diced tomatoes with green chilies (drained)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon chili powder (optional)
- 1 1/2 cups shredded cheddar cheese (divided)
Other Ingredients
- 1 (9.75 oz) bag Nacho Cheese Doritos (crushed)
- 1/2 cup shredded cheddar cheese (for topping)
- Chopped cilantro or green onions for garnish (optional)
Instructions
- Preheat and prepare dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
- Mix chicken filling: In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, milk, drained diced tomatoes with green chilies, garlic powder, onion powder, chili powder if using, and 1 1/2 cups of shredded cheddar cheese. Stir well until thoroughly blended.
- Layer Doritos base: Spread half of the crushed Nacho Cheese Doritos evenly across the bottom of the greased baking dish to create a crunchy foundation.
- Add chicken mixture: Spoon the prepared chicken mixture over the layer of Doritos, spreading it evenly to cover the chips completely.
- Top with remaining Doritos and cheese: Sprinkle the remaining crushed Doritos on top of the chicken layer, then distribute the remaining 1/2 cup shredded cheddar cheese evenly over the top.
- Bake: Place the casserole uncovered into the preheated oven and bake for 25 to 30 minutes, or until the casserole is hot, bubbly, and the cheese has fully melted and started to brown slightly.
- Serve: Remove from the oven and let cool slightly before serving. Garnish optionally with chopped cilantro or green onions to add a fresh, vibrant finish.
Notes
- For extra flavor, consider adding sautéed onions or jalapeños into the chicken mixture.
- Using rotisserie chicken can save time in preparation.
- This casserole reheats well, making it ideal for leftovers, potlucks, or quick weeknight meals.
