Description
A simple and healthy vegan date caramel recipe made with Medjool dates, non-dairy milk, sea salt, and vanilla extract. This naturally sweetened caramel can be used as a dip, spread, or a refined sugar-free sweetener for a variety of dishes.

- 20 Medjool dates
- 200 ml non-dairy milk (soy, oat, or almond milk work well)
- ½ teaspoon sea salt
- 1 teaspoon vanilla extract
Instructions
- Soak Dates: Place all of the dates in a medium bowl and cover with boiling water. Allow them to soak for 30 minutes to soften and prepare them for blending.
- Prepare Dates: Once the water is cool enough to handle, remove the pits from the dates and place the pitted dates into a high-speed blender or food processor for blending.
- Blend Ingredients: Add the non-dairy milk, sea salt, and vanilla extract to the blender with the dates. Blend until the mixture is smooth and creamy, stopping every minute or so to scrape down the sides of the blender jug with a spatula. This process can take up to 10 minutes depending on your blender’s power.
- Store Caramel: Once the date caramel is smooth and creamy, transfer it to an airtight container and store it in the refrigerator for up to 2 weeks.
- Freeze Option: You can also freeze the caramel for up to a couple of months in an airtight container or in an ice cube tray for individual portions. Defrost in the refrigerator overnight and whisk well before use.
- Serve and Enjoy: Use this healthy date caramel as a dip for apples or cookies, incorporate it into vegan desserts, or use it as a refined sugar-free sweetener for porridge, smoothies, shakes, or pancakes.
