Description

This Everything Bagel Breakfast Casserole combines savory sausage, creamy cheese, and chopped everything bagels into a hearty baked dish that’s perfect for a crowd. Prepared the night before and baked in the morning, it offers a convenient, flavorful breakfast option with a crispy top and a creamy, cheesy interior.

Ingredients

Scale

Main Ingredients

  • 5 everything bagels, split and chopped
  • 1 lb sausage
  • 4 oz cream cheese, softened
  • 7 eggs
  • 2¼ cups heavy cream
  • ¼ cup sour cream
  • 2 cups shredded cheddar cheese

Instructions

  1. Prepare the baking dish: Spray a deep-dish 9x13x2-inch baking dish with cooking spray to prevent sticking and set aside.
  2. Layer bagels: Spread the chopped everything bagels evenly in the bottom of the prepared baking dish.
  3. Cook the sausage: In a skillet over medium heat, cook the sausage until no longer pink. Drain the excess fat. Add the softened cream cheese to the skillet and stir until the cream cheese is fully combined with the cooked sausage.
  4. Assemble sausage layer: Evenly sprinkle the sausage and cream cheese mixture over the chopped bagels in the baking dish.
  5. Mix custard: In a bowl, whisk together the eggs, heavy cream, and sour cream until smooth and fully combined.
  6. Pour custard over casserole: Carefully pour the egg mixture evenly over the bagel and sausage layer.
  7. Add cheese topping: Sprinkle shredded cheddar cheese evenly on top of the casserole.
  8. Refrigerate overnight: Cover the casserole dish tightly with plastic wrap or foil and refrigerate it overnight, at least 8 hours, allowing the flavors to meld and the custard to soak into the bagels.
  9. Preheat oven and bake: Remove the casserole from the refrigerator and preheat your oven to 350ºF (175ºC). Bake the casserole uncovered for 55 to 65 minutes, or until the center is set and a toothpick inserted comes out clean.

Notes

  • For a vegetarian version, omit the sausage and consider substituting with sautéed mushrooms or a meat alternative.
  • Make sure to soften the cream cheese before adding to ensure easy mixing with the sausage.
  • Covering the casserole during refrigeration helps the flavors meld but bake uncovered to get a nicely browned top.
  • The casserole can be prepared up to a day ahead and baked fresh in the morning for convenience.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated in the oven or microwave.
