- Combine Sugar, Butter, Milk, Cocoa, and Salt: In a medium saucepan, combine the granulated sugar, butter, milk, cocoa powder, and salt.
- Melt and Boil: Place the saucepan over medium heat. Stir constantly until the butter is completely melted and the sugar is dissolved. Bring the mixture to a rolling boil.
- Boil for Exactly 1 Minute: Once the mixture reaches a rolling boil, set a timer for exactly one minute. Continue stirring constantly to prevent burning.
- Remove from Heat: After one minute of boiling, immediately remove the saucepan from the heat to avoid overcooking.
- Stir in Oats: Add the quick-cooking oats to the saucepan. Stir well to ensure that all the oats are evenly coated with the chocolate mixture.
- Add Peanut Butter and Vanilla: Mix in the peanut butter and vanilla extract until the peanut butter is fully melted and the mixture is smooth and combined.
- Optional – Add Nuts: If using, fold in the chopped walnuts or pecans to distribute them evenly throughout the dough.
- Drop by Spoonfuls: Using a spoon, drop dollops of the mixture onto a baking sheet lined with wax paper.
- Shape (Optional): If you prefer perfectly round cookies, gently shape each spoonful with your fingers or the back of a spoon.
- Let Set: Allow the cookies to set at room temperature for at least 30 minutes until firm. To speed up firming, refrigerate for 15-20 minutes.
