Ingredients
Primary Ingredients
- Feta cheese – 200g
- Large eggs – 4
- Cherry tomatoes, halved – 1 cup
- Fresh spinach – 2 cups
Seasonings & Oils
- Garlic, minced – 2 cloves
- Olive oil – 2 tablespoons
- Dried oregano – 1 teaspoon
- Crushed red pepper flakes (optional) – 1/4 teaspoon
- Salt – to taste
- Black pepper – to taste
Garnish & Serving
- Fresh basil or parsley – for garnish
- Crusty bread or pita – for serving
Instructions
- Preheat and prepare dish: Preheat your oven to 375°F (190°C). Take a small ovenproof baking dish or cast-iron skillet, drizzle the olive oil evenly, and spread the minced garlic across the base.
- Add vegetables: Scatter the halved cherry tomatoes on one side of the dish and place the fresh spinach on the other side. Lightly season both with salt and black pepper to enhance their natural flavors.
- Arrange feta and eggs: Crumble the feta cheese in the center of the dish. Crack the four eggs around and slightly over the feta, spacing them evenly to allow even cooking.
- Season and bake: Sprinkle the dried oregano and optional crushed red pepper flakes over the entire dish for added warmth and spiciness. Place the dish in the preheated oven and bake for 12-15 minutes, or until the egg whites are set but the yolks remain slightly runny.
- Finish and serve: Remove from the oven and garnish with freshly chopped basil or parsley. Serve immediately with crusty bread or warm pita to scoop up the creamy baked feta and luscious eggs. Enjoy your hearty, flavorful brunch!
Notes
- For a heartier meal, add cooked crumbled sausage or sautéed mushrooms alongside the spinach before baking.
- Swap cherry tomatoes for sun-dried tomatoes for a deeper, more intense flavor.
- If you prefer firmer yolks, extend baking time by an additional 2-3 minutes.
- Consider preparing this dish in individual ramekins for perfectly portioned servings at brunch gatherings.
