Description

This Fluffy Keto Cottage Cheese Cloud Bread is a light and airy low-carb bread alternative perfect for keto diets. Made with whipped egg whites and smooth cottage cheese, this bread is soft, golden, and ideal for sandwiches or breakfast stacks.

Ingredients

Scale

Egg Mixture

  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar

Cottage Cheese Mixture

  • 1/2 cup full-fat cottage cheese, blended until smooth
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon grated Parmesan cheese (optional)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper to prevent sticking and ensure even cooking.
  2. Beat Egg Whites: Place the egg whites in a clean mixing bowl and add the cream of tartar. Using an electric mixer, beat until stiff peaks form; this will give the bread its airy texture.
  3. Mix Egg Yolks and Cottage Cheese: In a separate bowl, combine the egg yolks with the blended cottage cheese and mix until smooth. Stir in salt and optional garlic powder and Parmesan cheese to enhance flavor.
  4. Fold Mixtures Together: Gently fold the beaten egg whites into the egg yolk and cottage cheese mixture in batches, taking care not to deflate the fluffiness.
  5. Shape and Bake: Spoon the batter into 6 equal mounds on the prepared baking sheet, shaping each into round discs about 1/2 inch thick. Bake for 25 to 30 minutes until golden brown and set.
  6. Cool Before Serving: Remove the cloud breads from the oven and allow them to cool completely before serving to enhance their structure and texture.

Notes

  • Ensure cottage cheese is fully blended and smooth for the best texture.
  • Store cloud bread in an airtight container in the refrigerator for up to 3 days.
  • Lightly toast before serving to improve flavor and texture.
  • Perfect for low-carb sandwiches or breakfast stacks.
