Description

A quick and delicious Fried Egg Quesadilla perfect for breakfast or a light meal. Crispy tortillas filled with fried eggs and melted cheese, served with fresh avocado, salsa, and sour cream for added flavor.

Ingredients

Scale

Main Ingredients

  • 2 flour tortillas
  • 2 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon butter
  • Salt and pepper, to taste

Optional Toppings

  • Sliced avocado
  • Salsa
  • Sour cream
  • Fresh herbs

Instructions

  1. Prepare the Skillet: Heat a non-stick skillet over medium heat and melt a small amount of butter to prepare the pan for frying.
  2. Fry the Eggs: Crack an egg into the skillet, season with salt and pepper, and cook until the whites are fully set but the yolks remain slightly runny. Remove the egg and repeat for the second egg.
  3. Assemble the Quesadilla: Place one tortilla in the skillet. Sprinkle half of the shredded cheese evenly over the tortilla. Add the fried eggs on top, along with optional sliced avocado if desired. Then sprinkle the remaining cheese over the eggs and cover with the second tortilla.
  4. Cook the Quesadilla: Cook the quesadilla for 2-3 minutes on each side until the tortillas are golden brown and crispy, and the cheese inside has melted completely.
  5. Serve & Enjoy: Slice the quesadilla into wedges and serve warm with salsa, sour cream, and fresh herbs for garnish.

Notes

  • Use a non-stick skillet to prevent sticking and ensure easy flipping.
  • For fully cooked yolks, cook eggs longer according to preference.
  • Customize with your choice of cheese or add extra fillings like sautéed peppers or onions.
  • Serve immediately for best flavor and texture.
