Instructions

  1. Heat the skillet and melt butter: Place a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Allow the butter to melt fully and start to sizzle.
  2. Cook the potatoes with seasonings: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Cook the potatoes for about 4 minutes without stirring to develop a crispy exterior. Then stir the potatoes and continue cooking for an additional 3-4 minutes until they are fork-tender. Remove the potatoes from the skillet and set aside in a bowl.
  3. Sear the steak bites: Increase the heat to high. Add the remaining 2 tablespoons of butter to the skillet and stir until melted. Place the steak cubes in a single layer and cook undisturbed for 1 minute to get a good sear. Flip or stir them and cook for 1-2 more minutes or until you reach your desired doneness.
