Ingredients
Scale
Vegetables
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 red bell pepper, chopped
- 1 yellow squash, sliced
- 1 zucchini, sliced
Seasoning & Oil
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried Italian herbs (or a mix of thyme, oregano, and basil)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon fresh parsley or basil, chopped (optional)
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Prepare the Vegetables: In a large mixing bowl, combine the broccoli florets, cauliflower florets, chopped red bell pepper, sliced yellow squash, and zucchini. Add the olive oil, minced garlic, dried Italian herbs, salt, and black pepper. Toss everything together thoroughly until all the vegetables are evenly coated with the oil and seasoning mixture.
- Arrange on Baking Sheet: Spread the coated vegetables out evenly in a single layer on the prepared baking sheet to ensure they roast evenly and get that perfect caramelization.
- Roast the Veggies: Place the baking sheet in the oven and roast the vegetables for 25–30 minutes. Stir them once halfway through cooking to ensure even roasting. The veggies should be tender and slightly caramelized around the edges when done.
- Finish and Serve: Remove the roasted vegetables from the oven. If desired, sprinkle fresh chopped parsley or basil over the top for added freshness and flavor. Serve warm as a delicious side dish or over your favorite grains for a complete, veggie-packed meal.
Notes
- Feel free to add other vegetables such as carrots, red onion, or mushrooms depending on what you have available.
- For extra flavor, sprinkle with grated Parmesan cheese or squeeze fresh lemon juice over the veggies just before serving.
