For the Sandwich:
- 4 slices sourdough or sandwich bread
- 1 cup shredded mozzarella or provolone cheese
- 1/2 cup shredded sharp cheddar cheese (optional for extra flavor)

Instructions
- Sauté the Mushrooms: Heat olive oil and 1 tablespoon of butter in a skillet over medium heat. Add the sliced mushrooms and cook for 5–7 minutes until they release moisture and become golden brown.
- Add Garlic and Seasonings: Stir in the minced garlic, thyme if using, salt, and black pepper. Cook for an additional 1 minute, stirring constantly to prevent burning. Remove the mushroom mixture from heat.
- Prepare the Bread: Butter one side of each bread slice evenly. This will help achieve a crispy, golden crust when cooked.
- Assemble the Sandwiches: Place two bread slices butter-side down in the skillet over medium-low heat. Layer half of the shredded mozzarella or provolone cheese on each slice, then evenly spread the garlic mushroom mixture over the cheese. Top with the remaining cheese and place the remaining bread slices butter-side up on top to complete each sandwich.
- Cook the Sandwiches: Cook each sandwich for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese melts thoroughly.
