- 1 large egg

- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Zest of 1 lemon

Instructions
- Combine Ingredients: In a large mixing bowl, add ground chicken, breadcrumbs, finely chopped red onion, minced garlic, beaten egg, fresh parsley, fresh mint or dill, dried oregano, ground cumin, salt, black pepper, and lemon zest. Mix gently with your hands or a spoon until just combined, being careful not to overwork the mixture to maintain tender meatballs.
- Form Meatballs: Shape the mixture into meatballs approximately 1 to 1.5 inches in diameter, ensuring they are evenly sized for uniform cooking.
- Heat Oil: Place a large skillet over medium heat and add the olive oil. Allow the oil to heat until shimmering but not smoking.
- Cook Meatballs: Add the meatballs in a single layer to the skillet, being careful not to overcrowd. Cook for about 8 to 10 minutes, turning frequently to brown all sides evenly. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C) for safe consumption.
- Rest and Serve: Remove the cooked meatballs from the skillet and let them rest for a few minutes. Serve warm, topped with crumbled feta cheese and a side of tzatziki sauce if desired.
