Chicken Marinade

Rice Mix
- 1 cup cooked brown rice (or white rice)

- 1 cup mixed greens or Romaine lettuce
- ½ cup black beans, rinsed and drained
- ½ cup canned corn, drained

- 1 tbsp jalapenos, sliced (optional)

Instructions
- Marinate the Chicken: In a Ziploc bag, combine olive oil, lime juice, paprika, cumin, chili powder, garlic powder, onion powder, dried oregano, salt, and pepper. Add the chicken breasts, seal the bag, and massage to coat evenly. Refrigerate for at least 30 minutes to allow the flavors to infuse.
- Cook the Chicken: Heat a grill pan over medium-high heat. Place the marinated chicken breasts on the pan and cook for 5 to 7 minutes on each side, until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked. Remove from heat and let rest for 5 minutes, then slice into bite-sized pieces.
- Prepare the Rice: In a bowl, mix the cooked brown rice with fresh lime juice, chopped cilantro, and a pinch of salt to taste. Set aside.
