Ingredients
Scale
Marinade
- 2 tablespoons balsamic vinegar
- 1 tablespoon soy sauce (gluten-free if needed)
- 2 cloves garlic, very finely minced (divided)
Mushrooms
- 2 lb button mushrooms, cut in half
Garlic Butter
- 2 tablespoons butter
- 2 cloves garlic, very finely minced (divided)
- A generous pinch of salt
Instructions
- Marinate the mushrooms: In a large bowl, combine the balsamic vinegar, soy sauce, and half of the minced garlic. Add the halved button mushrooms and gently toss to coat all the mushrooms evenly with the marinade. Set the bowl aside at room temperature and let the mushrooms marinate for 30 minutes to absorb the flavors.
- Heat the butter: While the mushrooms marinate, melt the butter in a small saucepan over low heat. Add the remaining minced garlic and a generous pinch of salt. Stir occasionally and let the garlic infuse the butter without burning it. Remove from heat and keep warm.
- Preheat the grill: Oil your barbecue grill grates lightly to prevent sticking and preheat the grill to medium heat for even cooking. Meanwhile, skewer the marinated mushrooms onto kebab sticks, arranging them carefully so they don’t fall off.
- Grill the mushrooms: Place the skewers on the preheated grill. Cook the mushrooms for about 5 minutes on one side. When it’s time to flip them, use two pairs of tongs for better control and turn the skewers carefully. Grill for another 5 minutes on the other side until the mushrooms are tender and have nice grill marks.
- Serve: Remove the grilled mushrooms from the skewers and arrange them on a serving plate. Drizzle the warm garlic butter over the mushrooms while they are hot. Serve immediately to enjoy the full flavors and the rich buttery garlic finish.
Notes
- Use gluten-free soy sauce to make this recipe gluten-free.
- Soaking wooden skewers in water for 30 minutes before grilling helps prevent them from burning.
- Button mushrooms are ideal for grilling as they hold shape well; other similar mushrooms can be used as substitutes.
- The garlic butter can be warmed gently on the stovetop just before serving to keep it melted and flavorful.
- The mushrooms can be served as a side dish, appetizer, or added to salads and grain bowls.
