Description

Bread and Oil

  • 1 fresh baguette, sliced into 1/2-inch slices
  • 2 tablespoons olive oil

Main Ingredients

  • 1 medium pineapple, peeled, cored, and sliced into rings
  • 8 oz burrata cheese, torn into small pieces

Spicy Honey

  • 2 tablespoons honey
  • 1/2 teaspoon red pepper flakes

Garnish

  • 1 tablespoon fresh mint leaves, chopped
  • Pinch of sea salt


Instructions

  1. Prepare the Grill and Bread: Preheat a grill or grill pan over medium-high heat. Brush both sides of each baguette slice with olive oil. Grill the slices for 1 to 2 minutes per side until they are lightly toasted and marked with grill lines. Remove and set aside.
  2. Grill the Pineapple: Place the pineapple rings on the grill and cook for 2 to 3 minutes per side until caramelized and slightly charred. Remove from the grill and cut into bite-sized chunks for easier assembly.
  3. Make the Spicy Honey: In a small bowl, combine the honey and red pepper flakes, stirring well to infuse the honey with a gentle kick of heat.
  4. Assemble the Crostini: On each toasted baguette slice, place a piece of torn burrata cheese, followed by several grilled pineapple chunks. Drizzle generously with the spicy honey.
