Ingredients
Scale
Biscuit Base
- 1 (12-oz) can refrigerated flaky layers biscuits (10-count)
Fillings
- 40 slices pepperoni
- 5 (1-oz) slices mozzarella cheese
Topping
- 2 Tbsp butter, melted
- ½ tsp Italian seasoning
Instructions
- Preheat and prepare the pan: Preheat your oven to 375ºF (190ºC). Lightly spray 10 cups of a regular muffin pan with cooking spray to ensure the biscuits don’t stick. Set the pan aside.
- Prepare the biscuits: Separate the can of refrigerated biscuits into 10 individual biscuits. On each biscuit, carefully cut three slits about half an inch apart, ensuring not to slice all the way through. These slits will hold the filling.
- Prep the cheese: Cut each slice of mozzarella cheese into 16 small squares to fit neatly into the biscuit slits.
- Stuff the biscuits: Stuff each of the three slits in every biscuit with pepperoni slices and mozzarella squares as follows: 1 pepperoni slice and 2 cheese squares in the left slit, 2 pepperoni slices and 4 cheese squares in the middle slit, and 1 pepperoni slice and 2 cheese squares in the right slit. This equates to 4 pepperoni slices and 8 cheese squares per biscuit.
- Arrange in pan: Place the stuffed biscuits upright in the prepared muffin pan to help them hold their shape during baking.
- Bake the biscuits: Bake the biscuits in the preheated oven for 18 minutes or until they are golden brown and cooked through.
- Prepare the topping and brush: While the biscuits bake, combine the melted butter with the Italian seasoning. Once the biscuits are baked and slightly cooled, brush the seasoned butter generously over each pizza biscuit to add flavor and shine.
Notes
- You can substitute mozzarella cheese with other melty cheeses like cheddar or provolone for different flavors.
- Feel free to add other fillings like sautéed mushrooms, olives, or bell peppers inside the biscuit slits.
- Use cooking spray to prevent sticking and make removal from the muffin pan easier.
- Serve warm for the best flavor and texture.
- These biscuits can be prepared ahead and baked just before serving.
