Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper to ensure easy removal of the bars after baking.
- Mix Dry Ingredients: In a large bowl, combine the quick-cooking oats and baking powder, stirring them together to evenly distribute the baking powder.
- Combine Wet Ingredients: In a separate bowl, whisk the egg. Then add the nut butter, maple syrup or honey, and vanilla extract, stirring until the mixture is smooth and well incorporated.
- Combine Wet and Dry: Pour the wet mixture into the bowl with the dry ingredients and stir until fully combined. Fold in 1/2 cup of the chocolate chips gently to distribute them throughout.
- Prepare for Baking: Spread the oatmeal mixture evenly into the prepared baking dish. Sprinkle the remaining 1/4 cup of chocolate chips on top, pressing them lightly into the surface.
- Bake the Bars: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the bars are golden brown and set firmly.
- Cool and Finish: Remove the bars from the oven. While still warm, sprinkle with flaky salt if using. Allow the bars to cool completely in the pan before cutting into 9 squares for serving.
