Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking.
- Cook the Sausage: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the Italian sausage and cook it until browned and fully cooked, about 6–8 minutes. Once done, transfer the sausage to a plate to cool slightly.
- Sauté Mushrooms and Spinach: In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and cook for about 5 minutes until they are browned. Then stir in the fresh spinach and sauté until wilted. Remove the skillet from heat.
- Mix Eggs and Seasonings: In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until the mixture is smooth and uniform.
- Combine All Ingredients: Add the cooked sausage, sautéed mushrooms and spinach, and shredded mozzarella cheese to the egg mixture. Stir everything together well to ensure even distribution.
- Transfer to Baking Dish: Pour the combined mixture into the prepared baking dish and use a spatula to smooth the top evenly.
- Bake the Egg Casserole: Place the baking dish in the preheated oven and bake for 30–35 minutes, or until the center is just set and the edges are golden brown.
- Cool and Serve: Remove the dish from the oven and let it cool for about 5 minutes before slicing into servings. This helps the casserole set further and makes slicing easier.
