  • 1 tablespoon olive oil
  • 14 oz smoked sausage, sliced into ½-inch rounds
  • 1½ pounds baby potatoes, halved or quartered
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)


Instructions

  1. Brown the sausage: Heat olive oil in a large skillet over medium-high heat. Add the sliced smoked sausage and cook it until browned, about 4 to 5 minutes. Once browned, remove the sausage from the skillet and set it aside.
  2. Cook the potatoes: In the same skillet, add the halved or quartered baby potatoes along with a pinch of salt. Cover the skillet and cook the potatoes for about 10 to 12 minutes, stirring occasionally, until they start to soften and develop a golden-brown exterior.
  3. Sauté the vegetables: Add the sliced onion, red and green bell peppers, and minced garlic to the skillet with the potatoes. Cook everything together for another 5 to 7 minutes, or until the vegetables have softened and are tender.
  4. Combine and season: Return the browned sausage to the skillet. Stir in smoked paprika, dried thyme, salt, and black pepper to taste. Cook for an additional 2 to 3 minutes to let all the flavors meld together.
