Instructions
- Bake the Potatoes: Preheat your oven to 400°F (204°C). Using a fork, pierce each russet potato several times. Place the potatoes directly on the oven rack and bake for 50–60 minutes until they’re tender when pierced.
- Prepare the Steak Bites: While the potatoes bake, heat olive oil in a large skillet over medium-high heat. Season the steak pieces evenly with garlic powder, smoked paprika, salt, and black pepper. Once the skillet is hot, sear the steak bites for 2–3 minutes on each side until nicely browned and cooked to your preferred doneness. Remove from heat and set aside.
- Assemble the Loaded Potatoes: When the potatoes are done, let them cool slightly to handle safely. Cut a slit across the top of each potato and gently press both ends to open them. Fluff the interior with a fork and add a pat of butter inside each potato.
