Ingredients
Scale
For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter (melted)
- 2 tbsp brown sugar
For the Filling:
- 16 oz cream cheese (softened)
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 1/2 cups heavy whipping cream (cold)
- 1/2 cup thick caramel sauce (plus extra for topping)
- 1 cup chopped Twix bars (about 6 fun-size bars)
For the Topping:
- 1/2 cup milk or semi-sweet chocolate chips (melted)
- Extra caramel sauce
- Extra chopped Twix bars
Instructions
- Prepare the crust: In a medium bowl, mix the graham cracker crumbs, brown sugar, and melted butter until fully combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Place it in the refrigerator to chill while you prepare the filling.
- Make the filling: In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy. In a separate bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Stir in the caramel sauce and chopped Twix bars.
- Assemble the cheesecake: Pour the filling over the prepared crust and smooth the top evenly. Drizzle melted chocolate and additional caramel sauce over the surface, then sprinkle with extra chopped Twix bars as desired.
- Chill to set: Refrigerate the cheesecake for at least 6 hours or overnight until firm and set.
- Serve: For a cleaner slice, optionally freeze the cheesecake for 1 hour before slicing, and use a hot knife to cut through the layers neatly.
Notes
- For a firmer texture, freeze the cheesecake for 1 hour before slicing.
- Use a hot knife to slice for clean, neat pieces.
- You can substitute graham cracker crumbs with crushed chocolate cookies to give the crust a chocolatey twist.
