Ingredients
Scale
Potatoes & Seasoning
- 2 lbs small red potatoes, scrubbed and halved or quartered if large
- 1 tablespoon olive oil
- Salt to taste
- 1 teaspoon dried rosemary
- 1/2 teaspoon dried thyme
Sausage & Sauce
- 1 lb Italian sausage (sweet or hot), casings removed
- 2 cloves garlic, minced
- 1/2 cup honey
- 1/4 cup soy sauce (low sodium preferred)
- 1/4 cup apple cider vinegar
- 2 tablespoons Dijon mustard
Garnish
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for the roasting process.
- Prepare Potatoes: Wash and scrub the potatoes thoroughly. Cut them into halves or quarters, depending on their size. Toss the potatoes in a bowl with olive oil, salt, dried rosemary, and dried thyme to evenly coat each piece. Spread the seasoned potatoes in a single layer on a large baking sheet to ensure even roasting.
- Cook Sausage: Heat a large skillet over medium heat. Crumble the Italian sausage into the skillet and cook until browned and completely cooked through, about 8-10 minutes. Once cooked, remove the sausage pieces from the skillet, leaving the rendered fat behind for added flavor.
- Make Honey Garlic Sauce: To the same skillet with the sausage fat, add the minced garlic and cook for 30 seconds until fragrant. Carefully stir in the honey, soy sauce, and apple cider vinegar. Bring the mixture to a simmer, then stir in the Dijon mustard. Continue to simmer the sauce for 2-3 minutes until it slightly thickens. Taste and adjust seasoning if needed.
- Roast Potatoes: Place the baking sheet with the potatoes in the preheated oven and roast for 20-25 minutes or until the potatoes are tender inside and slightly crispy on the outside.
- Combine and Finish Roasting: Remove the baking sheet from the oven and add the cooked sausage to the potatoes. Gently toss to combine. Pour the prepared honey garlic sauce evenly over the sausage and potatoes, then toss again to coat everything well. Return the baking sheet to the oven and roast for an additional 5-7 minutes, allowing the sauce to become bubbly and slightly caramelized.
- Cool and Serve: Remove from the oven and let the dish cool slightly. Optionally, garnish with freshly chopped parsley before serving for a fresh, vibrant touch.
Notes
- For a spicier version, use hot Italian sausage instead of sweet.
- If you prefer a thicker sauce, simmer the honey garlic mixture slightly longer.
- To save time, you can parboil the potatoes for 5 minutes before roasting to speed up cooking.
- Fresh herbs can be substituted for dried if available; just use a larger quantity (about three times more).
- This dish is best served warm and pairs well with a simple green salad or steamed vegetables.
