Description

This Irresistible Sweet Hawaiian Crockpot Chicken is a flavorful one-pot dinner that combines tender chicken thighs cooked slowly in a sweet and savory pineapple sauce. Enhanced with fresh bell peppers, garlic, and ginger, it’s an effortless meal perfect for busy days. Serve it over white rice for a comforting, tropical-inspired dinner.

Ingredients

Scale

Chicken and Marinade

  • 2 pounds boneless, skinless chicken thighs or breasts, cut into chunks
  • 1 cup pineapple juice
  • ½ cup brown sugar
  • â…“ cup low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • Salt and pepper, to taste

Vegetables and Garnish

  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 2 green onions, sliced (for garnish)

Thickening Slurry

  • 1 tablespoon cornstarch
  • 1 tablespoon water

Serving

  • Cooked white rice, for serving

Instructions

  1. Season Chicken: Lightly season the chicken chunks with salt and pepper, then place them evenly at the bottom of the crockpot.
  2. Prepare Sauce: In a small bowl, whisk together pineapple juice, brown sugar, low-sodium soy sauce, minced garlic, and grated fresh ginger until well combined.
  3. Combine Ingredients in Crockpot: Pour the prepared sauce over the chicken in the crockpot. Then add the chopped red and green bell peppers along with the pineapple chunks on top.
  4. Cook: Cover the crockpot and cook on low for 5 to 6 hours or on high for 2½ to 3 hours, until the chicken is tender and fully cooked through.
  5. Thicken Sauce: About 30 minutes before the end of cooking, mix the cornstarch with water to form a slurry. Stir this slurry into the crockpot to thicken the sauce slightly.
  6. Serve: Once the cooking is complete and the sauce has thickened, serve the chicken hot over cooked white rice. Garnish with sliced green onions for a fresh finish.

Notes

  • For added heat, incorporate a pinch of red pepper flakes or a splash of sriracha into the sauce before cooking.
  • This recipe can be adapted by substituting the chicken with boneless pork or tofu to suit different preferences.
  • To make it gluten-free, use tamari sauce instead of regular soy sauce.
