Instructions
- Season Chicken: Lightly season the chicken chunks with salt and pepper, then place them evenly at the bottom of the crockpot.
- Prepare Sauce: In a small bowl, whisk together pineapple juice, brown sugar, low-sodium soy sauce, minced garlic, and grated fresh ginger until well combined.
- Combine Ingredients in Crockpot: Pour the prepared sauce over the chicken in the crockpot. Then add the chopped red and green bell peppers along with the pineapple chunks on top.
- Cook: Cover the crockpot and cook on low for 5 to 6 hours or on high for 2½ to 3 hours, until the chicken is tender and fully cooked through.
- Thicken Sauce: About 30 minutes before the end of cooking, mix the cornstarch with water to form a slurry. Stir this slurry into the crockpot to thicken the sauce slightly.
