Ingredients
Scale
Cheese Mixture
- 1 pound extra-sharp cheddar cheese, shredded
- 1/2 pound Monterey Jack cheese, shredded
- 1/4 cup chopped pickled jalapeños
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper, to taste
Quesadillas
- 10 large flour tortillas (12-inch diameter recommended)
- 2 tablespoons vegetable oil or butter
For Serving
- Sour cream
- Salsa
- Guacamole
Instructions
- Prepare Cheese Mixture: In a large bowl, combine the shredded cheddar cheese, Monterey Jack cheese, chopped pickled jalapeños, chili powder, cumin, garlic powder, and cayenne pepper if using. Mix everything well until evenly incorporated.
- Season the Mixture: Season the cheese mixture generously with salt and freshly ground black pepper. Taste and adjust the seasonings to your preference for balanced flavor.
- Lay Out Tortillas: On a clean flat surface, lay out 5 of the flour tortillas, spacing them apart to prepare for assembly.
- Assemble Quesadillas: Evenly distribute about 1 1/2 cups of the cheese mixture onto the center of each tortilla, leaving a 2-inch border around the edges for folding.
- Fold and Seal: Fold each tortilla in half over the filling, gently pressing to flatten. Use a fork to crimp and seal the edges, preventing cheese from leaking during cooking.
- Heat Skillet: Place a large skillet on medium heat. Add 1 tablespoon of vegetable oil or butter and allow it to melt and heat through.
- Cook Quesadillas: Cook 2 to 3 quesadillas at a time in the skillet for about 3 to 4 minutes on each side until they turn golden brown and the cheese inside is completely melted. Press gently with a spatula for even cooking and crispy texture.
- Cool and Repeat: Remove the cooked quesadillas and transfer them to a wire rack to cool slightly and retain crispness. Repeat the cooking process with the remaining tortillas and filling.
- Create Jack-o’-Lantern Faces: Once the quesadillas have cooled enough to handle, use a sharp knife or festive cookie cutters to cut out jack-o’-lantern faces on the surface. For added detail, use a toothpick to etch finer features or enhance the design.
- Serve: Arrange the jack-o’-lantern quesadillas on a serving platter and serve immediately with sides of sour cream, salsa, and guacamole for dipping.
Notes
- Using a wire rack to cool the quesadillas helps keep them crispy instead of soggy.
- If you prefer a milder heat, reduce or omit the cayenne pepper and jalapeños.
- For a sharper jack-o’-lantern design, freeze the quesadillas slightly before cutting shapes.
- Butter typically gives richer flavor; use vegetable oil for a neutral taste.
- Substitute flour tortillas with gluten-free tortillas to make the recipe gluten-free.
