- 1 (20-oz) package frozen cauliflower rice, thawed
- 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained
- ½ cup sour cream
- ½ cup shredded Monterey Jack cheese
Instructions
- Cook the sausage: In a large skillet over medium-high heat, add olive oil and cook the smoked sausage rounds until browned and heated through, releasing their smoky flavor.
- Sauté the vegetables: Add diced onion, poblano pepper, and sweet bell pepper to the skillet with the sausage. Cook, stirring occasionally, until the vegetables are soft and fragrant.
- Add seasoning and garlic: Stir in minced garlic, butter, cajun seasoning, salt, and pepper. Cook until the garlic is fragrant and the butter has melted, coating the ingredients.
- Cook the cauliflower rice: Add the thawed cauliflower rice to the skillet. Stir well and cook until it softens and begins to brown slightly, incorporating all the flavors.
