- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
- Prepare the Dough: In a mixing bowl, combine almond flour, egg, softened butter, erythritol, and water. Stir thoroughly until a smooth dough forms with a uniform consistency.
- Roll and Cut the Dough: Lightly flour a clean surface with almond flour and roll out the dough into a thin rectangular shape. Using a knife or pizza cutter, slice the dough into small rectangles, similar in size to traditional pop tarts.
- Add the Jam Filling: Spoon about 1 teaspoon of your preferred sugar-free jam onto the center of half of the dough rectangles, leaving space along the edges.
- Seal the Pop Tarts: Carefully fold the remaining dough rectangles over the jam-covered halves to create pockets. Press the edges firmly to seal and crimp with a fork for a decorative finish and to ensure the jam doesn’t leak out during baking.
- Bake the Pop Tarts: Arrange the sealed pop tarts on the prepared baking sheet and bake them in the oven for 12-15 minutes, or until the crust turns a golden brown color.
