Ingredients
Scale
Crust
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
Filling
- 2 large eggs
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup fresh lime juice
- Zest of 2 limes
Topping
- Powdered sugar, for dusting
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish thoroughly to prevent the bars from sticking.
- Prepare the crust: In a mixing bowl, combine graham cracker crumbs, melted unsalted butter, and granulated sugar. Mix until all crumbs are evenly coated with butter. Firmly press this mixture into the bottom of the prepared baking dish to form a compact and even crust layer.
- Make the filling: In a separate bowl, whisk together the large eggs, sweetened condensed milk, fresh lime juice, and lime zest until smooth and fully blended, creating a creamy lime mixture.
- Assemble the bars: Pour the lime filling evenly over the pressed crust layer. Use a spatula to spread it smoothly and uniformly across the surface.
- Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes. Bake until the edges are lightly golden and the filling is set and firm to the touch without wobbling.
- Cool the bars: Remove the baked bars from the oven and allow them to cool completely at room temperature to set. Then refrigerate the bars for at least 2 hours to chill and fully firm up.
- Serve: Before serving, dust the chilled bars generously with powdered sugar. Cut into 16 squares and enjoy!
Notes
- Use fresh lime juice for the best flavor and brightness in the filling.
- Ensure the crust is packed firmly to prevent it from crumbling when sliced.
- Refrigerating the bars overnight enhances the texture and flavor.
- For an extra touch, garnish with lime slices or zest before serving.
- Store leftovers covered in the refrigerator for up to 3 days.
