Ingredients
Scale
Salmon
- 4 salmon fillets (about 6 oz each)
- 3 tbsp butter, melted
- 2 tbsp fresh lemon juice
- 1 tsp garlic powder
- 1 tsp dried parsley
- Salt and pepper, to taste
Potatoes
- 4 medium potatoes, diced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper, to taste
Broccoli
- 2 cups broccoli florets
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it’s ready for roasting the potatoes, salmon, and broccoli.
- Prepare the Potatoes: Toss the diced potatoes with olive oil, garlic powder, thyme, salt, and pepper until evenly coated. Spread them out in a single layer on a baking sheet. Roast for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy.
- Prepare the Salmon: While the potatoes roast, mix melted butter, fresh lemon juice, garlic powder, dried parsley, salt, and pepper in a small bowl. Place the salmon fillets on a separate baking sheet and brush them generously with the lemon butter mixture to infuse flavor and moisture.
- Roast the Salmon: After the potatoes have been roasting for 15 minutes, put the salmon fillets in the oven. Bake for 12-15 minutes until the salmon is cooked through and flakes easily with a fork, indicating perfect doneness.
- Prepare the Broccoli: While the salmon and potatoes cook, toss the broccoli florets with olive oil, salt, and pepper for seasoning. During the last 10 minutes of the potatoes’ roasting time, add the broccoli to the same baking sheet or a separate one to roast alongside them until tender and slightly crisp.
- Serve: Once all components are cooked, plate the lemon butter salmon with the crispy roasted potatoes and tender roasted broccoli on the side. Enjoy this well-balanced and flavorful meal!
Notes
- For even cooking, make sure potatoes are cut into similar-sized pieces.
- You can substitute fresh parsley for dried parsley if preferred, but reduce the quantity by half.
- Feel free to add a squeeze of fresh lemon over the salmon before serving for extra brightness.
- Use a meat thermometer to verify salmon reaches an internal temperature of 145°F (63°C) for optimal food safety.
- Leftovers can be refrigerated for up to 2 days and gently reheated in the oven or microwave.
